High Fiber Chicken and Chickpea Plate

Ingredients

  • 3 oz Diced chicken
  • 3 oz Chickpeas drained
  • cup Sauce of choice
  • 4 oz Vegetable medley
  • 3 oz Basmati rice (Use brown basmati rice for even higher fiber!)

Instructions

  • Cook the chicken per specifications.
  • Heat chickpeas over medium heat for 3-4 minutes. Mix with chicken.
  • Add sauce to the chicken and chickpea mixture and cook for 2-3 minutes until heated through.
  • Saut茅 vegetable medley over medium high heat for 4-5 minutes, or until cooked to preference.
  • Cook rice according to directions on packaging.
  • Plate the chicken mixture, rice, and vegetables.
